Our truffle salt is handmade in Canberra using our fresh black truffle from the paddock. The fresh truffle is shaved into Olsson’s Sea Salt Flakes which is touted as Australia’s answer to Fleur de Sel, Olsson’s Sea Salt Flakes are the result of a decades-long quest to perfect the ancient tradition of making sea salt into flakes. Sea water from the Great Australian Bight is evaporated to produce the delicate flakes which have a distinct ‘sea salt’ sweetness to their flavour profile. Olsson’s are also the first company in Australia to produce ‘flat’ Sea Salt Flakes, extremely delicate and easily crumbled with the fingers. Other salt flakes have a pyramid shape which makes their structure more durable and as a result, less delicate.
